Cooking pasta with lentils without boiling

Makes 6-8 servings

Ingredients:

1 13.2-ounce can of pasta
1 tablespoon Italian seasoning
1 teaspoon of salt
1 teaspoon minced garlic
2 tablespoons of olive or avocado oil
1/4 cup tomato paste
1/2 onion, diced
2 cups sliced ​​mushrooms
1 bell pepper, diced
3/4 cup split red lentils
1 large 28-ounce can tomatoes, diced or whole
1 cup of breadcrumbs (optional)
2-3 tablespoons vegan cashew parmesan, nutritional yeast or vegan cheese (optional)

Directions:

  1. Preheat the oven to 375 degrees F.
  2. In a large baking dish (11 x 11 inches worked well in this recipe), add the uncooked dry pasta, Italian seasoning, salt, minced garlic, olive oil and mix well.
  3. Add the tomato paste and mix well again.
  4. Add onion, mushrooms, bell pepper, split red lentils and canned tomatoes and mix further. If you are using whole canned tomatoes, break up the tomatoes with a spatula and mix.
  5. Add 4 cups of water and bake at 375 degrees F for 45 minutes.
  6. Take out and stir to make sure the mixture cooks evenly. Then top with breadcrumbs, vegan Parmesan or other toppings of your choice and cook for another 15 minutes.
  7. Take out of the oven and let cool for about 10-15 minutes. Serve hot !

Creamy Mushroom and Potato Soup

Makes 4 servings

Ingredients:

1 tablespoon of olive oil
1/2 onion, diced
3 cups mushrooms, sliced
1 tablespoon garlic, minced
1 large potato, peeled and cut into small pieces
2 tablespoons of flour
4 cups of water or vegetable broth
1 cube vegetable broth block (if using vegetable broth listed above, omit)
1 tablespoon of thyme
1 tablespoon of miso paste
1 can of 15 ounces of coconut milk
Salt, to taste
Pepper to taste

Directions:

  1. Heat the oil in a large saucepan over medium-high heat.
  2. Add the onions and cook for a minute, then add the mushrooms and garlic. Cook for another 1 to 2 minutes.
  3. Add the potato and cook for another 1 to 2 minutes.
  4. Add the flour, stir quickly and slowly add water or broth while stirring.
  5. If you are using it, add a cube of vegetable stock, breaking it into smaller pieces. Add the thyme. Bring to a boil over high heat.
  6. Once it comes to a boil, lower to medium-low to simmer for about 20-30 minutes until the potatoes are tender.
  7. Meanwhile, add the miso paste to a small bowl with a few spoonfuls of the hot broth, taken from the pot. Stir to thin out the miso paste. Put aside.
  8. Once the potatoes are cooked, add the coconut milk. Mix well and cook for another 10 minutes.
  9. Turn off the heat, add the diluted miso paste and mix well.
  10. Add salt and pepper to taste and enjoy!

Double chocolate fondant cookies

Makes about 14-16 small cookies

Ingredients:

3/4 cup white flour
1/4 cup cocoa powder
1/3 cup sugar
1/2 teaspoon baking soda
1/4 teaspoon of salt
1/3 cup chocolate chips (plus 2 tbsp or additional garnish, if desired)
1 tablespoon of vegetable oil
3 tablespoons of applesauce
1/4 cup non-dairy milk (more if needed)
1/2 teaspoon vanilla extract

Directions:

  1. Preheat the oven to 325 degrees F.
  2. In a medium sized mixing bowl, add the white flour, cocoa powder, sugar, baking soda, salt and 1/3 cup of the chocolate chips. Mix well.
  3. Add vegetable oil, applesauce, non-dairy milk and vanilla extract and mix well. If needed, add an additional 1 tablespoon of non-dairy milk at a time to achieve a thick, cookie-dough-like consistency.
  4. Wet a tablespoon of water (or use a small ice cream scoop) and drop small scoops of cookie dough onto a lined baking sheet.
  5. Top each cookie with 2 tablespoons of additional chocolate chips, if desired.
  6. Bake at 325 degrees F for 12-13 minutes.
  7. Let cool for at least 10 minutes and enjoy! These are very delicious when served hot because the chocolate gets nice and gooey.
DOUBLE CHOCOLATE FUDGY COOKIES
Ingredients (for about 14-16 small cookies)
